Millionaire’s shortbread also known as caramel shortbread, caramel squares, caramel slice, chocolate caramel squares-is a Scottish origin dessert.

The dessert has three layers, first being that of a crumbly shortbread. Second is the layer of caramel and the third one is that of dark chocolate ganache.

Now one might think why is it called a “millionaire’s” shortbread?! Well, the story goes that the name was given at the place of its origin itself, Scotland. This dessert has multiple textures with distinct yet commenting flavors stacked in one bite. The bottom shortbread layer gives you crumbly biscuit followed by chewy and gooey caramel. All this is topped with delicious dark chocolate ganache layer.

All purpose flour – since we are making a biscuit base, using correct type of flour is important for its adequate gluten formation.

Castor Sugar– using castor sugar helps get the right aeration needed when butter is creamed with sugar. Do not replace castor sugar with icing or brown sugar as that would affect the final taste and texture of the shortbread.

Condensed milk – while making caramel we generally do not need condensed milk. However, this is a recipe for chewy caramel for which condensed milk is crucial as it provides the required consistency and texture of the caramel.

Steps to prepare millionaire's shortbread

METHOD:

For Shortbread

  1. Cream sugar and butter till light n fluffy.
  2. Add milk, vanilla and mix.
  3. Add flour and give it a final mix.
  4. Pour it in a 6 inch square ring. Which is double cling wrapped and has butter paper at the bottom.
  5. Bake it at 180° C for 25-30 minutes

Method:

For Chewy caramel

  1. Mix all the ingredients together and heat in low flame.
  2. Whisk continuously otherwise it will burn
  3. To check if its done or not, pour one drop of caramel in cold water, if we can make a ball out of it with our fingers then it is done.

Method :

For Ganache

  1. Melt dark chocolate and warm the cream.
  2. Mix the two to make a smooth ganache.

ASSEMBLY

  1. Once the shortbread is baked and cooled, Pour the caramel over it and spread evenly. keep this in the fridge to set.
  2. Now, pour ganache over caramel and make Swirl design using a bent palette knife.
  3. Sprinkle some flaky sea salt at the top.
  4. Keep this in the fridge for 15-20 minutes before cutting it.
  5. Once set, cut it into 9 pieces.
