Day 1: Introduction to Viennoiseries, Dough preparation and prepping for Lamination

Starting on Day one, We’ll start by preparing our rich dough both with hands and with the help of an industrial planetary mixer. Along with the dough we will also be preparing dry butter blocks that will be used for the lamination of the dough.

Day 2 and 3: Lamination and Practice Sheeting with a Sheeter and by hand.

On Day 2 and 3 we will start with the lamination process, for complete understanding of this part students will be working on a dough sheeting machine, and for those who do not have dough sheeters we will also be laminating with hands without the use of any machine.

Day 4: Shaping, Filling and frostings.

On day four we will start with the shaping and of the Viennoisieries, we will also be making various fillings and frostings. on this day we will also start with the proofing and baking process.

Day 5: Proofing, Baking and Buffet

Finally on day five, we will be completing all the baking and assembly of the products and at the end of the day we will have a beautiful and elaborate buffet presenting everything that you have learned and made in this 5 day master course.

And yes, all the recipes you’ll learn in this workshop are available in both egg and eggless versions.
