  3. ½ teaspoon baking soda
  4. ¼ teaspoon salt
  5. 1 cup butter, softened to room temperature
  6. 2/3 cup castor sugar (also known as caster sugar)
  7. ½ cup brown sugar, tightly packed
  8. 8 ounces cream cheese or vegan cream cheese, softened to room temperature
  9. 1 large egg + 1 large egg yolk at room temperature
  10. 2 teaspoons pure vanilla extract
  11. 3 cups of chopped strawberries

Instructions

  1. To make these delicious Strawberry Cheesecake Cookies, you’ll need to gather a few ingredients and prepare to bake! First, preheat your oven to 350°F (177°C). Then, let’s start by whisking together the dry ingredients. Add flour, baking powder, soda, and salt in a large bowl. Mix together until combined, then set aside.
  2. Next, it’s time to cream together the butter and sugars. In a separate bowl or stand mixer, add the softened butter and both types of sugar. Cream together until light and fluffy, about 3-4 minutes. Then add the softened cream cheese, egg and egg yolk, and vanilla extract. Beat together until all ingredients have been completely incorporated.
  3. Now it’s time to mix the wet and dry ingredients together! With the mixer on low speed, add the dry ingredients to the wet in two parts. The dough should be thick and sticky! Once combined, fold the chopped strawberries with a rubber spatula or wooden spoon.
  4. Finally, transfer the cookie dough onto a parchment-lined baking sheet. Using an ice cream scoop or your hands, shape the dough into 1-inch balls and place them 2 inches apart on the cookie sheets. Bake for 14-16 minutes until golden brown around the edges (they will still be soft on top). Let them cool for 5 minutes before transferring them to a cooling rack.
