Ingredients and Equipment required for Streusel

Method for Streusel

  • In a bowl, mix all the dry ingredients together and start rubbing the butter with fingertips, until a crumbly texture is achieved.
  • Now combine it together and freeze for atleast 20 minutes.
  • Take out the frozen streusel and then grate it using a grater.

Ingredients and Equipment required for Cookie Dough

Method for Cookie Dough

  • Preheat the oven at 180˚C (OTG mode: upper rod + lower rod + fan).
  • Make the streusel and freeze it for around 20 minutes.
  • In a bowl take sugar, tea leaves together and crush with your hands.
  • Add butter to the sugar – tea mixture and start beating using an electric beater until light, pale and fluffy.
  • Now add honey & vanilla essence to the creamed butter and mix. Then sift in flour and salt. Combine everything well to form a dough.
  • Roll out the dough between butterpaper to 5 mm thickness. Then cut out cookies using 7 cm round cookie cutter.
  • Now place the cookies on a lined baking tray and keep aside.
  • Place a nozzle in centre of the cookie and start spreading streusel on the remaining portion of the cookie. Remove the nozzle and pipe jam in the centre. Now keep the tray in the freezer for 10 – 15 minutes.
  • Bake at 180˚C (OTG mode: upper rod + lower rod + fan) for 15 – 20 minutes, or until edges turn golden brown.
  • Once baked, let it cool down. Finish off with piping some jam again in the centre.
